Poley and Spiros Zisimatos. In the 1970's Madeline helped create, in the words
of New York Times restaurant critic Mimi Sheraton, "an emerging American
cuisine" as the co-owner of Soho Charcuterie & Restaurant. She is also
the co-author of The Soho Charcuterie Cookbook. Spiros is an innovative
restaurant industry veteran who has owned or operated successful establishments
for more than 25 years. Together, Madeline and Spiros are creating the next
